Gongura leaves are rich sources of iron, vitamins and anti-oxidants. Surya uses green stemmed Gongura leaves to make its pickle. The leaves are chosen based on their freshness, colour and taste. The leaves are cleaned thoroughly before mixing in with other ingredients. It is consumed in great quantities in the Andhra state of India.
